Our grapes are picked at full maturity – both analytically and hedonistically. Fermentation occurs in half-ton bins and stainless steel tanks with four daily punchdowns or pumpovers for maximum extraction. Small containers allow for a moderately warm fermentation to preserve the intense fruitiness of both varietals. Bottling occurs in the late summer, and the wines are released at the beginning of the following year.

2005 Carignane On sa Its violet, chocolate and cherry aromas are echoed on the palate, supported on a framework of sturdy tannins and firm acidity which, while encouraging current consumption with roast chicken, turkey or pork, will carry it gracefully through the next three to four years in the bottle.
